That way, the heat is a little more hidden, and people are like "wow, what's in this?" It's supposed to be a meat relish, so it's just fun. I also do dried cherries or apples, orange zest, nuts, etc. It's a fun thing to just kind of vary from year to year. This year I made it with dried apricots and apples.... still spicy, but with other textures. I like to do ginger and cayenne pepper.
